I am NOT Masterchef, Rachael Ray, Paula Deen, or any of the other fabulous chefs we know and love. But the other day I wanted to make a delicious potato soup. So I found two recipes that we love and put together some of the ingredients to make an awesome potato soup. I was just so excited that for the first time I made up a recipe (kinda) and it was good! So I wanted to share!
5-6 medium potatos, diced
2 cups of chicken broth
2 cups of water
1 tsp ground black pepper
1/4 tsp. thyme
2 cups of milk
1 packet of thick vegetable soup
1 can of cream of chicken soup
8 oz. cream cheese
1 tsp celery salt
1 tsp garlic powder
Place potatos in water, chicken broth, thyme, and pepper in soup pot. Cook for 25-30 minutes on medium low until potatos are tender. In a medium pot, add milk, vegetable soup packet, cream of chicken soup, cream cheese, celery, and garlic powder. Warm this mixture and whisk together until cream cheese is blended well. When the potatos are tender, add the milk mixture to the pot. Turn down the heat to low and allow to simmer for 5-10 minutes. Top with cheddar cheese, bacon bits, and green onions! Delicious!
